The version of Kiwix used by OpenDisc is a really really old version which is really different to the actual Kiwix SVN code. So, if you want to use actual Kiwix code base, this is really a good idea, and I will do my best to help you. But I think this need that we talk about that. About, the MacOS port, you are 100% right, we have not anymore a port for Mac. This is mainly a problem of time, and a little bit of competences: I'm not a Mac developer, so I need to learn a little bit.

But porting Kiwix for Mac should not be really complicated. The Mac port is on the 0.9 roadmap and we have currently the alpha5 release.
